I have a mate with an RS6, we've tried a rolling race and to be honest they are about equal and the difference is going to be down to the driver. I'd also expect it to be on a par with your old E63.
Can't really help with your other questions. Although in terms of where to go for a remap, Evolve seem to be aiming as the goto place. They have done a great deal of work on the F10 and seem to know their game. As with all tuners, they need to build a reputation for both doing the job well and supporting their customers. A good example being MRC, they won no end of awards and really do know what they are talking about when it comes to tuning Audi S & RS cars.
