Rosetta stone or "class" will get you the basics. But to truly learn another language you need to live it, be forced to speak it everyday, and for a long enough time to solidify it. Even then if you stop using it, like anything, it will get rusty. Everyone I know that speaks more than 1 language competently says there's a point where their brain isn't going back and forth between the language and their native tongue, that they simply "think" in the language they are speaking.
Edit: If your GF speaks Spanish, when it's just you and her speaking, try and ONLY speak Spanish, no matter the level of difficulty of the thought being conveyed.
