Tell her she fucked up and that you are gonna give her the 6 months she requested. And then send her a bday card with a picture of what her $25k ring would have looked like and tell her that you will have about $25k to blow over the next 6 months on other girls.
But on a serious note. Move on. She will do it again in the future with the next guy she meets that she wants to experience with.
