I mean, does it make it more oily or shiny? Merino as it comes from factory has no oil or shine look, it's just a matte fine grain texture, I'd like to preserve it that way. Not sure if that's possible?

Yes. I would recommend you use the barrier sparingly (generally most lotions create gloss when used excessively) and use the matte version of the leather protection cream which won't affect the finish at all.
