Champagne is too yellowish, suits a 7er much better than a M5.. but it wouldn't be my 7er.
If you purchased the car, maybe look into buying leather from BMW and have it installed. Not sure on cost but I know this is possible.
However if I were in your shoes I would unload the car, take the hit and then spec out an Individual M6 Gran Coupe, and go all in on it.
