ABS, ESP are only good before you overheat the brakes. To keep within "the limits of physics" (especially on mountain roads) engine braking is still necessary. To save the brakes too. Just don't downshift too low: one gear is a good compromise usually. I brake in the third gear to save the transmission and disengage the clutch the last moment only, to avoid a stall.
