Spaghetti alle capesante!

Part of my goal to eat more fish.

Spaghetti with pan seared scallops and fried breadcrumbs. Wow, good!

Scallops pan seared in butter, EVOO and red pepper flakes.

Breadcrumbs fried in EVOO.

Pasta tossed in pan juices with pasta water and parmesan. Similar to cace e Pepe but with less cheese. Plated and garnished with S&P, more red pepper flakes and Parmesan. Garlic is common in a recipe like this but I wanted the wonderful scallop flavor to come through, which it did!


Easy and good! Grapes for dessert.

Those are BIG scallops. Not too chewy? I usually get mine from the Digby wharf.

Fairly typical size in my area. Not chewy. My experience is that scallops that are not overcooked are not chewy. They cook fast so it takes close attention and not too high heat to avoid overcooking.

A slight sear on both sides is all that is needed. Scallops cooked medium is my goal. Cooking them all the way through is overcooking in my book.
