Shakshuka
Never gets old! So flavorful and fresh. Strictly speaking, shakshuka does not include meat. This is a Turkish-inspired version using sucuk smoked dry beef sausage. Onions Garlic Bell pepper Zucchini Aubergine Fresh tomatoes Sucuk Eggs Cumin Salt Freshly ground black pepper Many versions call for tomato paste and canned tomatoes. I used neither, and rather increased the diced fresh tomatoes. This version is therefore 100% fresh, with the exception of the sucuk. Using fresh tomatoes and skipping the cans simplifies the recipe because of fewer ingredients, and increases freshness by avoiding processed products where possible. Shakshuka can be eaten for breakfast, lunch and dinner. It is often eaten with (flat) bread. Tomorrow I plan to have leftover shakshuka on rice. Last edited by chassis; 12-17-2023 at 08:05 AM.. |

We went up to Champaign at the U of I campus and ate at one of our favorite places. It's a quasi-Korean restaurant with traditional Korean food like Bibimbap and non-traditional stuff like my Crispy Chicken here.
